豆制品生產線中從原料到制成漿液之磨糊，磨糊的目的是破壞大豆組織結構，使大豆蛋白質能游離出來溶于水中，磨碎時大豆的粗細度對蛋白質抽提有很大的影響，而磨制中加水量的多少，對大豆粉碎的粗細度及磨糊稠有直接的關系，因而磨糊時須控制好豆與水的配比。豆制品機械生產中從原料到制成漿磨豆淋水是用水帶動大豆在磨床內起潤滑作用;二是磨子運轉時發(fā)生熱量淋水起到冷卻作用，三是可使磨碎物細膩，同時在磨的作用下使水和大豆蛋白質混合成均勻的膠體溶液。
