滾揉機是利用物理沖擊的原理，讓肉在滾筒內上下翻動，相互撞擊、摔打、達到按摩、腌漬作用。

液壓滾揉機工作原理：液壓滾揉機采用變頻無級調速，速度范圍3-12 rpm（可以選擇1-4 rpm低速功能）。啟動平穩(wěn)，降低機器啟動時的沖擊，延長設備使用壽命。專門配置輔料真空吸管。采用（選配）PLC和觸摸屏控制可以將總工作時間至多分成六個工藝循環(huán)，每個工藝循環(huán)分成兩步，每一步單獨設定時間、轉速、真空狀態(tài)、轉向。滿足多樣性產品的加工要求。高標準的衛(wèi)生設計。整機采用SUS304不銹鋼材料；滾揉桶內部精細拋光，無衛(wèi)生死角，卸料位置能排水。可選的“V型”和“單片型”槳葉，不同的滾揉力度，適應不同的產品。
